Thai Recipe: Chicken Coconut Soup
Can you find Thailand on a map? Want to get a taste of delicious Thai food? Try making Tom Kah Kai or chicken coconut soup. This recipe is not too hard to make, but you will need some help from an adult. Whoever helps you will be thrilled they did when they taste this delicious concoction that they help you make!
- 1 can of chicken broth
- 1 cup water
- 2 tablespoons lime juice
- 1 teaspoon chopped ginger
- 1/4 teaspoon salt
- 2 teaspoons sugar
- 1 14 ounce can of coconut milk
- 1 uncooked chicken breast, thinly sliced
- Fresh cilantro leaves
- Combine the broth, water, lime juice, ginger, salt and sugar in a pot and cook for 5 minutes.
- Add the coconut milk and chicken breast and cook for 8 more minutes or until the chicken is cooked through.
- Pour into bowls and top with fresh cilantro leaves
- If you want, you can make some white rice and serve the soup over rice.
- Put 2 cups of water into a pan and bring to a boil
- Once at a boil, add 1 cup of rice, stir and turn heat to low
- Cover the pan and simmer for 30 minutes
- Fluff rice and enjoy!
