Pineapple Snow
Imagine the sweet scent of tropical breezes and the cool, gentle touch of soft falling snow and you’ll know what this refreshing summer dessert is all about. Ask an adult to help you with this delicious recipe and enjoy serving it to your friends and family. And don’t forget to save some for yourself.
- 1 envelope of unflavored gelatin
- 1/2 cup cold water
- 1 can crushed pineapple (20 ounces)
- 1 cup heavy cream
- 1 cup sugar (two 1/2 cups)
- 1 teaspoon vanilla
- 1 pot
- glass or pyrex bowls or a 10×6 pan
- egg beater
- Put the gelatin in a bowl and add the cold water. Stir. Let gelatin soak until it starts to thicken.
- Put the pineapple, including the juice, into a pot and add 1/2 cup sugar.
- Heat the pineapple mixture until it comes to a boil.
- Ask an adult for help and very carefully remove the pot from the stove. Stir in the thickened gelatin.
- Carefully pour mixture into a glass or pyrex dish and chill in the refrigerator until it starts to thicken.
- Whip the heavy cream till it just starts to thicken.
- Add 1/2 cup sugar to the heavy cream and whip just until soft mounds appear.
- Fold in vanilla.
- Fold the whipped cream into the cold pineapple mixture and return to the refrigerator. Chill until set.
- Serve chilled.
