Passover Jam Drop Cookies
There is nothing like a jam drop cookie, they so perfectly combine taste and texture to bring out the best in both! A drop of delicous jam or fruit paste surrounded by baked flour makes for a culinary moment that is hard to beat for adults and kids. Try this delicous recipe, and feel free to improvise with your own favorite jam or fruit preserve to drop at the center of this super treat!
- 1/2 cup butter
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 2 egg yolks
- 1 cup matzo cake meal
- 1 1/2 cup finely chopped walnuts
- jam, your choice of flavor
- Cream butter, sugar, vanilla and salt until light and fluffy.
- Add egg yolks and beat thoroughly.
- Blend in cake meal
- Form dough into 1″ balls and roll in nuts.
- Place on lightly greased cookie sheets about 1 1/2 ” apart.
- Press down in center.
- Bake at 350 degrees for 15 minutes, or until lightly browned.
- Remove from oven and press down center with back of teaspoon. Be careful not to burn your fingers.
- Cool slightly before removing from pan.
- Spoon jam into center of each cookie.
