Cheese Latkes
Besides the usual potato pancakes and jelly doughnuts, there are many wonderful dishes that are specially prepared for the Jewish holiday of Hanukkah. Fried foods are symbolic of the miraculous oil that burned for the eight days on a Hanukkah candlestand. While this delicious pancake recipe is simple to make, is does use hot oil, which is dangerous. So be absolutely sure to ask a responsible adult to help you.
- 1 pound cottage cheese
- 6 eggs
- 1/2 cup sugar
- pinch of salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/2 a lemon
- 1 cup flour
- oil for frying
- sour cream
- grater
- frying pan
- long-handled spatula
- Grate the peel of the 1/2 lemon
- Combine all the ingredients in the order given except for the oil and sour cream.
- Heat the oil in the frying pan
- Drop the mixture by tablespoonfuls into the hot oil, and fry until golden brown.
- Remove from the pan with a long handled spatula.
- Gently place on a paper towel to absorb the excess oil.
- Serve topped with sour cream.
