Cajun Pralines
Here’s a true Cajun dessert, which comes from the southern US state of Louisiana. Does that sound as French as pralines? Maybe so. Louisiana was sold by the French to then fledgling United States in 1803. The pralines are just as good as ever though! Make sure to ask someone to help when using the stove!
Here’s what you’ll need:
- 1 package butterscotch pudding (not instant)
- 1 cup sugar
- ½ cup brown sugar
- ½ cup evaporated (Pet) milk
- 1 tablespoon vegetable oil
- 1 cup broken pecans
What to do:
- Mix pudding, sugar, milk and oil in a sauce pan.
- Bring to a boil.
- Boil slowly for 10 minutes. (This should bring the mixture to the “soft ball” stage.)
- Beat until mixture slightly thickens.
- Add pecans.
- Drop by spoon onto waxed paper.
- Let cool about ½ hour.
